If you are choosing strictly between pine and teak for a pergola in Dubai, teak is the clear winner. The extreme heat and UV levels will destroy the wrong timber very quickly.

Teak
This is a dense hardwood packed with natural oils. Those oils stop the wood from drying out, which is exactly what prevents warping and splitting under the Dubai sun. It is incredibly stable. The only downsides are the massive cost of building a full pergola out of it, and the fact that the sun will bleach it to a silvery gray unless you regularly apply a UV-protective oil.

Pine
Pine is a softwood that loses moisture fast. Even if you buy pressure-treated pine, the intense heat will bake it. You can expect it to twist, shrink, and develop deep cracks. Keeping a pine pergola alive in the UAE requires sanding and resealing multiple times a year.
